Chopped bacon adds surprising depth to this fresh and easy Mediterranean salsa.

Directions

Heat oil in a skillet over medium heat. Add bacon and onions and sauté until bacon is slightly crisped, about 4 minutes. Add tomatoes and bring to a boil. Turn heat back to medium and simmer for 5 minutes or until slightly thickened. Stir in olives and parsley. Season Mediterranean salsa with salt and pepper.

Serve with Mustard Crumb Crust Fried Chicken and Corn and Pepper Fritters. Makes about 1 cup (250 mL).

Ingredients 1 tbsp (15 mL) olive oil
1/4 cup (50 mL) chopped bacon
1/2 cup (125 mL) chopped onions
1 cup (250 mL) pureed canned tomatoes
1/4 cup (50 mL) chopped pitted black olives
1 tbsp (15 mL) chopped parsley
Salt and freshly ground pepper to taste
