What to do with green tomatoesI just cleaned up my garden on the weekend in anticipation of today's awful, terrible, icy cold weather and picked piles of green tomatoes that probably won't have a chance to ripen. Many of them are cherry tomatoes (pear tomatoes, actually - small and pear-shaped), so fried green tomatoes isn't really an option. I was thinking green tomato relish, but I just found an article on green tomatoes on the site oregonlive.com that's giving me a lot more ideas, like Green Tomato and Apple Hazelnut Crisp. My husband and I are both diabetic so I make our own raspberry jam from green tomatoes. By peeling and chopping the tomatoes in a food processor and using a sugar substiute like Splenda and Jello Light raspberry jello, the jam tastes as good or even better than any store bought jam. I have fooled many people with this jam. Thay cannot believe this is made from green tomatoes.
